Ice cream tacos with banana foster

Happy Valentines Day week! I thought I would put up a surprise this week for all my lovely readers. My beautiful friend Maureen aka Mo agreed to share one of her awesome recipes with us this week on the blog in honor of the international day of love... Ice cream tacos with banana foster. It's very quick and easy and delicious! Also, conveniently I already had most all these ingredients in my own kitchen, except for the ice cream. I've already made it for our house and love it.

*you can also substitute the vanilla extract for the liquor of your choice: dark rum, brandy, or banana liqueur*

Mo and I used to work together when I lived in Florida. She is a fellow artist, wife, mother, and full-time public health nurse! Talk about wonder woman, she also is an incredible cook with a great sense of fashion (she rocks scrub pants). I honestly do not know where she finds the time to do all these things so well. 

She was one of the first people who turned me on to blogging. I desperately miss working with her and getting to eat her sweet treats! Thank you to her daughter Macie for taking the photos above and Mo for her time in the kitchen.
